We had a couple of bananas that needed to be used up! They got that strange, freckled look that screams "use me, use me!". So I complied and made up some Banana Muffins. This recipe makes 12 muffins. If you omit the mix-in's, they are about 2 grams of fat each. But, I slather butter on mine at the end...

Prep time: 10 minutes
Bake time: 25-30 minutes
Ingredients
- 2 cups flour
- 3/4 cup brown sugar
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 egg
- 1 tbsp vegetable oil
- 2-3 bananas
- 1 tbsp skim milk (my batter needed it!)
- 1/2 cup pecans or walnuts, chopped (optional)
- 1/2 cup chocolate chips (optional)
Preheat oven to 350 degrees. In a small bowl, whisk together flour, brown sugar, baking soda, cinnamon, and salt. In a large bowl, mash bananas, and stir in egg and oil. Add dry ingredients to the wet, and stir to combine. My batter was really stiff so I added a little milk, but you might not need it. If you are adding any nuts or chocolate, mix it in at this point. Then, scoop batter into a greased muffin pan and bake for 30 minutes or until they pass the toothpick test. Mine only took 25.
