I adore iced coffee during the summer. I do not adore paying $3 a pop for mostly ice. I came across this gem on smitten kitchen and decided to try it out with a special box of Gevalia German Chocolate Cake flavored coffee that was given to me by a very kind lady I worked with last year! [Thanks, Peggy!]
All you have to do is mix 1/3 c. ground coffee with 1 1/2 c. water in a jar or something and let sit for 12 hours. Then, strain through a coffee filter twice. Mix this concentrated coffee with equal parts water, served over ice with milk if desired. I started to add a packet of splenda to mine, but it tasted great already! The hints of coconut and chocolate really came through. Yummy!
It keeps well refrigerated. I had some today and yesterday, and still have enough for one more cup in the morning!
